Penny Kovacs (@pennysprimal) has created her own mouth-watering and healthy take on this classic steak recipe. The secret to the incredible flavors is marinating the steak overnight! Give this one a try on the grill or sear it on the stovetop.

Ingredients

2 lbs beef flank or sirloin tips
- 1/2 cup red onion, diced
- 2 cloves garlic, peeled
1 Tbsp adobo spice, I use Primal Palate
1 Tbsp chili powder
- 1 tsp cumin
- 1 tsp oregano
- 1 tsp salt (only if adobo is unsalted)
- 1/2 tsp pepper
2 Tbsp avocado oil
Directions
Combine all ingredients except steak in a blender and blend till smooth adding a little water if needed to thin it to a marinade consistency.
Marinate steak over night or at least 4 hours.
Grill or pan sear to 145 temp for medium rare.
Cover with foil and let rest 10 minutes (do not skip this step!).
Cut into thin slices.
