All of our beef comes from the Black Angus cattle, prized for its hardy musculature and distinctive, delicious marbling. The varying textures and flavors of each cut comes in large part from where on the cattle it comes.

Steak Craft Burgers
Our juicy Steak Craft Burgers are made from a ground blend of sirloin, chuck, and short rib (which comes from the chuck, brisket and plate sections).

Filets, NY Strips, and Porterhouse Steaks
These fine cuts of steak all come from the particularly tender short loin section, revered as the most tender portion of the cow.

Ribeyes
Cut from the rib – the most intricately marbled section of the cattle – ribeyes are impossibly rich and flavorful.

Sirloin Steak
The sirloin is a long section of muscle that runs from the top of the back down to the flank just in from of the hindquarters, and is divided into sub-sections. Our center-cut Sirloin Steaks come from the "top sirloin".

Chuck Roast
Chuck Roast comes from the large
frontquarter section of the animal known as the chuck, which makes up more than 25% of the available beef content on a cow.
