Favorite quick & Easy Dinner!
We missed Rastelli’s bacon wrapped shrimp, so I decided to order their raw, shelled, deveined jumbo gulf shrimp AND their bacon and make my own bacon wrapped shrimp, and it is now my favorite quick & yummy dinner! I take out the number of frozen shrimp we need & quick thaw in cold water. Meanwhile I get out my frying pan, toothpicks, cutting board & sharp knife. Cut the bacon needed in half (12 shrimp = 6 pieces of bacon halved) When shrimp is thawed, pour off water and place shrimp on paper towel lined paper plate, take one at a time and wrap in a half bacon strip securing with a toothpick. Place in ungreased frying pan after wrapping and toothpicking. When all are in pan, start cooking over med high heat uncovered (but can use a splatter shield) turning every 2 minutes to avoid burning for a total of 8-10 minutes when bacon is crispy. Can move to paper towel lined plate to allow excess fat to drain. Serve with salad, and garlic bread. Less than an hour from freezer to YUM!
