Because of its meaty texture, mahi mahi is an ideal fish for grilling. Season with olive oil and salt and pepper and cook over high heat for about 4-5 minutes per side. Cook to an internal temperature of 145°F.

Also known as Dorado, the commercially popular name Mahi Mahi means “very strong” in Hawaiian. They’re named for their strong musculature, a result of their quick growth cycle – they are among the fastest growing fish in the sea. They yield a dense, rich flesh similar in texture to swordfish, but even milder in taste.
