Pumpkin Spice Pork Tenderloin
The Pumpkin Spice Pork Tenderloin offers a delightful fusion of savory and warm, autumnal flavors. The succulent Rastelli’s Pork Tenderloin is encased in a tantalizing dry rub featuring aromatic cinnamon, a hint of clove, robust espresso, and Rastelli’s Signature Seasoning, with a touch of brown sugar, ginger, and vanilla extract for a perfectly balanced taste. Searing in a hot cast iron pan and finishing with a flambe of bourbon imparts a rich depth, resulting in a tenderloin that's both juicy and bursting with seasonal zest.
2 tbsp Grapeseed Oil
2 ½ tbsp Butter
2 cloves Garlic, crushed
2 sprigs Rosemary
2 oz Bourbon
1 tsp Cinnamon
¼ tsp Ground Clove
4 tsp Fine Ground Espresso
4 tsp Rastelli’s Signature Seasoning
1 tsp Brown Sugar
1 tsp Ground Ginger
½ tsp Vanilla Extract
Mix dry rub in bowl and mix thoroughly. Sprinkle evenly on flat plate.
Take Rastelli’s Pork Tenderloin and roll in dry rub, evenly coating sides.
Place cast Iron pan on Med High heat till extremely hot.
Pour in oil and sear tenderloin, 3 min per side and add rosemary and garlic.
After one min, add Butter and baste tenderloin for 2 minutes.
After two minutes, add bourbon and flambe, continue cooking until desired temperature.
Let pork rest for two minutes, serve with desired sides.
