Baked Chicken Nachos

1 pkg Rastelli’s Chicken Strips
2 tbsp Taco Seasoning
2 tbsp Chili Powder
¼ cup Olive Oil
8 oz Tomato Sauce
Few dashes of Hot Sauce
1 large bag Tortilla Chips
2 cups grated Cheddar Jack cheese
2 fresh Jalapeno, sliced thin
3 Tomatoes, finely chopped
3 Green Onions, green and white parts, finely chopped
¼ cup Sour Cream
Preheat the oven to 350* F. Sprinkle the taco seasoning and chili powder all over the chicken.
Heat the oil in a nonstick skillet over medium-high heat. Add the chicken and saute until heated. Remove from skillet, shred and set aside.
To the skillet, add the tomato sauce, hot sauce and 2 cups of water and bring to a gentle boil. Add the chicken and simmer on low until everything is hot and bubbly.
Assemble the nachos. Sprinkle a layer of tortilla chips onto ovenproof plates. Sprinkle with cheese and then a layer of chicken; repeat twice more with each layer. Finish with an extra sprinkle of cheese. Bake until the cheese melts, 5-10 minutes.
After baking, layer on jalapenos, black olives, tomatoes, green onions and sour cream.
