Rack of Lamb

Our grass-fed lamb comes in a frenched rack, humanely raised in lush Australian pastures, these free-range lambs are 100% grass-fed, yielding a perfect balance of flavor and tenderness. Roast the rack whole, then slice into individual chops for an impeccable meal.

Simple is best with lamb. Season with a generous amount of olive oil, salt and pepper and roast on a baking sheet or roasting pan in an oven preheated to 400° until lamb reaches 135°. Be careful not to overcook!

Rack of Lamb is cut from the Rib primal, which encompasses a series of six ribs located between the shoulder and the loin. Meat from this primal is the most tender on the lamb and mild in flavor. The whole rack works best in the oven where it cooks in dry heat. Alternatively, the rack can be sliced into individual chops before cooking.
