Hand selected for even marbling, our Dry Aged Organic Grass-Fed New York Strip is dry aged a minimum of 24 days, intensifying the nutty or buttery spiciness of this organic, grass-fed and finished cut.

For best results thaw under refrigeration. Use within 5-7 days. Cook steak according to a meat thermometer rather than a timetable. Remove steaks from grill, pan or oven 5 degrees before desired doneness. Let steak rest 5-10 minutes before serving. Rare 125-130 degrees, Medium Rare 130-145 degrees, Medium 140-145 degrees, Medium Well 150-160 degrees, Well - 160-170 degrees

A NY Strip is a “strip” steak cut from the Short Loin primal, located on the cattle’s back behind the rib. The muscles in this primal, which contains the spine, get more “work” in the animal’s every day movements than the neighboring ribs, yielding a leaner steak and one that is fat and is revered for its beefy flavor and firm chew.
