Chuck Roast does best when braised in liquid and cooked over relatively low heat. We like to use it for pot roast. Season the roast with salt and pepper, than sear on all sides in a hot, well-oiled stock pot. After it's brown on all sides, place in an oven preheated to 350° and cook for two hours until tender.

Chuck Roast is named for the Chuck primal from which it comes, a large section at the front of the cattle that includes the neck, shoulder and upper portions of the chest. Chuck Roast is often sold as “pot roast” and is ideal for stovetop or oven braising. It’s slightly fattier than other slow-cooking cuts like short rib and brisket and has a rich taste.

Grass-Fed, Grain Finished
