After a meteoric rise in popularity in the 90s, it faced a perilous future as demand for this delicacy far outpaced the means to fish it sustainably. After years of conservation efforts, the practice of fishing for Chilean Sea Bass has become the most highly regulated in the world, and it stands as one of the greatest success stories in fishery management. Now a Marine Stewardship Council-recognized fish, our Chilean Sea Bass comes from a small-pull boat operation in Patagonia, where it’s cleaned, cut and blast-frozen on the boat, sealing in its just-out-of-the-ocean freshness until you’re ready to thaw, cook, and enjoy.
