In culinary terms, what we refer to as a scallop is really just its abductor muscle – a dense, circular disc that is responsible for opening and closing the scallop’s shell, which it uses for propulsion. This highly used muscle develops into a firm but tender piece of meat which is among the most prized seafood products on the market.
The high salinity levels and active currents of the Western Atlantic Ocean are the perfect breeding ground for Atlantic Sea Scallops. Our scallop fishery is MSC and NOAA-certified and managed under the Atlantic Sea Scallop Fishery Management Plan. Using bottom-safe dredges, the scallops are harvested from the waters between Cape May and Cape Cod, with minimal impact to the sea floor and other marine wildlife. They’re hand-shucked aboard the vessel, where they’re blast-frozen without any added solution, yielding a tender, sweet, succulent scallop.

These were the best thing going on Christmas Day, had them for breakfast actually and they could not have tasted any better. Very, very pleased with how delicious they were, how well prepared, and how easy to cook as well. Five stars for sure!
