You don’t see a lot of pastured veal on the market, so when we found a farming partner that raises veal the right way, we made them part of the family. Under the big skies of the midwestern plains, our free-range veal is raised on small family farms by ranchers who pioneered the American free-range veal revolution. 100% untethered and uncrated, they’re milk-fed for 8 weeks, then moved to plentiful pastures where they graze, with constant access to forage, water and shade. Ten-acre pastures are rotated every year to ensure the grass stays rich in nutrients. Like everything we source, our veal never receives antibiotics, steroids or hormones.
