Led by our founder Ray Rastelli, himself a butcher for more than 45 years, our team of craft butchers expertly hand-trims our cuts with precision, yielding a product that's ideal for cooking and with as little as waste as possible.

BLAST FROZEN FOR FRESHNESS

All of our products are vacuum-sealed, ensuring microbes and excess moisture are removed from the packaging. They're then blast frozen – super cold and super fast, guaranteeing a product that's fresh upon arrival.
