
Turkey Sloppy Joes

Serves: 4 people
Ingredients
- 1 teaspoon olive oil;
- 1 small white onion (diced);
- 1 red bell pepper (diced);
- 2 garlic cloves (minced);
- 1 pound Organic Ground Turkey;
- Salt and pepper;
- 1/2 cup organic ketchup;
- 1/4 cup BBQ sauce;
- 1/2 tablespoon Worcestershire sauce;
- 1/2 tablespoon red wine vinegar;
- 1 teaspoon yellow mustard;
- 1/8 teaspoon cayenne pepper (optional);
- 4 whole grain hamburger buns (or whatever type you prefer);
- 1/2 cup shredded pepper jack cheese;
- Optional: Jalapeño slices or pickles;
Preparation

Add olive oil to a skillet and heat over medium high heat;

Add garlic, white onion, red bell pepper and sauté for about 5 minutes or until onions are translucent;

Transfer ingredients from skillet to a small bowl;

Add ground turkey to skillet and season with salt and pepper (breaking up turkey as it cooks);

Once turkey is cooked, add back in the sautéd garlic, onion and red pepper;

Next add to the skillet the ketchup, BBQ sauce, Worcestershire sauce, vinegar and mustard (and cayenne pepper if using);

Stir well and bring to a simmer;

Once simmering, reduce heat to low and let cook for another 10 minutes (feel free to add a little water if the sauce is too thick for your liking);

After 10 minutes, add the shredded cheese and cover with a lid for about 2 minutes to let the cheese melt;
Serving
- Spoon the Sloppy Joes onto the hamburger buns;
- Add Jalapeño or pickle slices;
- Enjoy!
