Teriyaki Chicken Meatballs

These juicy meatballs are finished in 30 minutes and coated with the most delicious sauce. Penny Kovacs (@pennysprimal) likes to serve them up over cauliflower rice or a delicious stir fry of fresh veggies! You can easily double this recipe to have leftovers for lunch.

Ingredients

1 lb. ground chicken
1 Egg
½ cup Almond flour
3 Green onions (mince white part, slice green part and reserve for garnish)
1 tsp. Sesame oil
1 tsp. Ginger (minced)
½ tsp. Pepper
½ tsp. Salt
1 cup Teriyaki sauce
Sesame seeds (for garnish)
Directions
Preheat oven to 400° F and line sheet tray with parchment paper.
Combine everything except the teriyaki sauce, green onion and sesame seeds. Mix well and shape into 1½ inch meatballs.
Place on sheet tray and bake for 20 minutes.
Remove and place meatballs in a skillet. Add teriyaki sauce and simmer for 10 minutes.
Garnish with green onion and sesame seeds. Serve and enjoy!
