Air Fried Spicy Mango Chicken

Penny Kovacs (@pennysprimal) made this delicious tropical chicken in the air fryer! The thick, sweet and spicy marinade comes together in minutes and is perfect for dipping your chicken into. Talk about finger-licking good!

Ingredients

3 lb whole chicken, pat dry with paper towels
- 2 mangoes, peeled & cut into pieces
- 3 cloves garlic, peeled
- 1/3 cup coconut aminos
- 1 tbsp Korean chili flakes
- 4 tbsp rice vinegar
- 1 tbsp fresh ginger, cut in small pieces
Directions
Put all ingredients except chicken in a high speed blender till smooth (it will be thick).
Reserve half of the sauce for dipping.
Gently lift the chicken skin with your fingers (I wear gloves for this).
Rub marinade under skin on both sides.
Rub marinade over entire outside and place refrigerator covered for a few hours.
Spray air fryer basket with oil.
Air fry at 390 degrees for 45-50 minutes flipping halfway through (Checking with a thermometer around 40 minutes for 165 degrees at thickest part).
