
Pistachio Crusted Salmon

Ingredients:
- 2 salmon fillets
- 1 tbs dijon mustard
- 2 tbs almond meal
- 1/4 cup chopped pistachios
- 3 tbs lemon juice
- 1 tbs stevia
Preparation:
- Preheat oven to 360 F
- In a bowl, combine almond meal, lemon juice, stevia and mustard
- Evenly spoon mixture on top of each salmon fillet Spread chopped pistachios on top
- Bake for 15 minutes
