
Pan Seared Marinated Organic Top Sirloin Steaks

Active Cook Time: ~10 minutes (plus additional 10 minutes to rest after cooking)
Serves: 4 people
INGREDIENTS
For the Marinade
- ½ cup red wine;
- ¼ cup extra-virgin olive oil;
- 3 tablespoons red wine vinegar;
- 1 tablespoon Dijon mustard;
- 6 cloves garlic, sliced;
- 2 teaspoons anchovy paste, optional;
- Sea salt and freshly ground black pepper;
For the Protein
- 4 Organic Grass-Fed Top Sirloin steaks (5-6oz. each); or
- ~1 pound Organic Grass-Fed Skirt steak;
- Canola oil (or other cooking oil suitable for high heat);
Preparation
- Whisk the marinade ingredients together in a 9x13-inch glass dish;
- Set the grass-fed steaks in the marinade and turn them to coat both sides;
- Cover and refrigerate for at least 2 hours and up to 24 hours, turning several times during that time;
- Remove the steaks from the refrigerator about 20 minutes to allow them to come up to room temperature before cooking;
- Before cooking remove from marinade and pat dry with paper towels;
- Season with salt and pepper;
Grilling Instructions:
- Lightly coat the bottom of a large skillet (we prefer cast iron) with canola oil. Note: Add the oil to the pan before putting it on the stove;
- Set the pan over high heat until the oil starts to shimmer;
- Add the steaks, two at a time, or more if they fit comfortably. Do not crowd the pan;
- Cook for about 3-5 minutes per side for a medium-rare 8-ounce, 1 1/2-inch thick steak;
- Pro Tip: We suggest using an instant read meat thermometer and cooking to an internal temperature. 129 degrees is the preferred temperature for medium-rare if you are cooking grass-fed beef;
If you need to cook in two batches, set the cooked steaks on a plate to rest (do not stack them) and cover loosely with aluminum foil. Wash the pan and cook the remaining steaks in the same manner.
Serving
- Let all the steaks rest for at least 10 minutes before slicing;
- Season to taste with salt and pepper;
- Slice thinly, serve;
