INGREDIENTS

For the Marinade

  • ½ cup red wine;
  • ¼ cup extra-virgin olive oil;
  • 3 tablespoons red wine vinegar;
  • 1 tablespoon Dijon mustard;
  • 6 cloves garlic, sliced;
  • 2 teaspoons anchovy paste, optional;
  • Sea salt and freshly ground black pepper;

For the Protein

Preparation

  1. Whisk the marinade ingredients together in a 9x13-inch glass dish;
  2. Set the grass-fed steaks in the marinade and turn them to coat both sides;
  3. Cover and refrigerate for at least 2 hours and up to 24 hours, turning several times during that time;
  4. Remove the steaks from the refrigerator about 20 minutes to allow them to come up to room temperature before cooking;
  5. Before cooking remove from marinade and pat dry with paper towels;
  6. Season with salt and pepper;

Grilling Instructions:

  1. Lightly coat the bottom of a large skillet (we prefer cast iron) with canola oil. Note: Add the oil to the pan before putting it on the stove;
  2. Set the pan over high heat until the oil starts to shimmer;
  3. Add the steaks, two at a time, or more if they fit comfortably. Do not crowd the pan;
  4. Cook for about 3-5 minutes per side for a medium-rare 8-ounce, 1 1/2-inch thick steak;
  5. Pro Tip: We suggest using an instant read meat thermometer and cooking to an internal temperature.  129 degrees is the preferred temperature for medium-rare if you are cooking grass-fed beef;

If you need to cook in two batches, set the cooked steaks on a plate to rest (do not stack them) and cover loosely with aluminum foil. Wash the pan and cook the remaining steaks in the same manner.

Serving

  • Let all the steaks rest for at least 10 minutes before slicing;
  • Season to taste with salt and pepper;
  • Slice thinly, serve;
  • Enjoy!
