1 lb Scallops
¼ Cup Arrowroot Powder
½ tsp Salt
1 tsp Garlic Powder
2 Tbsp Ghee
½ Cup Lemon Pepper Nut Crumbs
1 Whole Lemon, cut in wedges for garnish
¼ Cup Flat Leaf Parsley
Pat scallops dry with paper towels.
In one bowl, mix arrowroot with salt & garlic powder.
Melt ghee in a second bowl.
In a third bowl, place nut crumbs.
Spray air fryer basket with oil.
Toss scallops in arrowroot mix.
Then one at a time, dip in ghee & let excess drip off.
Then into nut crumbs and place into air fryer.
Continue until all are coated & in the basket trying not to touch each other.
Set air fryer to 400* and cook for 7-10 minutes depending on scallop size. Larger ones take 10 minutes.
Garnish with parsley & serve with lemon wedges.
