There's something special about this American classic dish deconstructed into a warm, comforting soup to satisfy those burger cravings on cold days. From the kitchen of Penny Kovacs (@pennysprimal), this recipe is Whole 30, Paleo, and gluten free, and will quickly become your go-to for soup season!

Ingredients

1 lb grass-fed ground beef
- 1 large onion, diced
- 2 large potatoes, diced
- 1 bell pepper, diced
- 2 carrots, diced
- 2 Tbsp ghee
- 5 oz chopped kale
- 1/2 cup nutritional years
- 1 15 oz can diced tomatoes
- 2 Tbsp tomato paste
- 4 cups beef broth or bone broth
- 1 cup coconut cream
- 1 tsp dill
- 1 tsp salt
- 1/2 tsp pepper
Directions
Melt ghee in large stock pot.
Add onion, pepper, carrots and stir until onions get soft.
Add beef and cook until browned.
Add broth, tomatoes, tomato paste, potatoes, and spice.
Bring to a boil, then reduce heat to a simmer.
Add yeast, stirring to combine.
Add coconut cream, stirring to combine.
Add kale and let simmer until wilted.
