Greek Inspired Chicken Salad
This fresh summer salad by Hayley Lucero (@realfoodwithaltitude) that can be made in a matter of minutes is our definition of a perfect lunch.
1 lb Cooked chicken breast, shredded
1 cup avocado mayo
2 Tbsp red wine vinegar
1 Tbsp Kalamata olives, chopped
1 Tbsp red onion, chopped
1 Tbsp Pepperoncini, chopped
1 tsp Garlic powder
1/2 tsp Parsley
1/2 tsp Dill
1/2 tsp Oregano
1/2 tsp Onion powder
1/2 tsp Salt
1/2 tsp Pepper
Combine all the ingredients except the chicken into a bowl and whisk together.
Pour sauce over the shredded chicken and mix together until the chicken is thoroughly coated.
Serve with your favorite veggies, crackers, or bread. Enjoy!
