By Penny Kovacs (@pennysprimal) own admission, this is one of her favorites! Egg Roll in a Bowl is made with lots of fresh cabbage and delicious ground pork and a few other ingredients which makes this dish taste exactly like an egg roll without the fried outer shell. We love this recipe and especially love the leftovers for breakfast with a fried egg on top!
1 pound Organic Ground Pork
3 tablespoons Sesame Oil
½ cup Onion (diced)
2 cloves Garlic (minced)
5 Green Onions (sliced; reserve some green parts for garnish)
3 cups Green Cabbage (shredded)
3 cups Purple Cabbage (shredded)
1 cup Carrots (grated or sticks)
1 teaspoon Fresh Ginger (minced); or ½ teaspoon dried ground ginger
1 teaspoon Salt
