By Penny's own admission, this is one of her favorites! Egg Roll in a Bowl is made with lots of fresh cabbage and delicious ground pork and a few other ingredients which makes this dish taste exactly like an egg roll without the fried outer shell. We love this recipe and especially love the leftovers for breakfast with a fried egg on top!

Ingredients

1 pound Organic Ground Pork
3 tablespoons Sesame Oil
½ cup Onion (diced)
2 cloves Garlic (minced)
5 Green Onions (sliced; reserve some green parts for garnish)
3 cups Green Cabbage (shredded)
3 cups Purple Cabbage (shredded)
1 cup Carrots (grated or sticks)
1 teaspoon Fresh Ginger (minced); or ½ teaspoon dried ground ginger
1 teaspoon Salt
1 teaspoon Pepper
¼ cup Coconut Aminos
2 tablespoons Rice Vinegar
2 tablespoons Sesame Seeds (optional for garnish)
Directions
Heat sesame oil in a skillet over medium heat.
Add onion garlic and green onion to skillet and sauté until translucent.
Add pork and cook until no longer pink.
Add ginger, salt and pepper.
Add cabbage carrots, coconut aminos and vinegar and sauté until cabbage us tender.
Garnish with green onions and sesame seeds.
Serve and enjoy!
