Crispy Orange Chicken & Snow Peas

Craving take out but wanting to keep it healthy? Try this orange chicken and snow pea recipe from Penny Kovacs (@pennysprimal). It's better than take out and made all in one pan!

Ingredients

1 1/2 lb chicken thighs, cut in pieces
- 1/2 cup arrowroot powder
- 1/2 cup cassava flour or tapicoa
- 1 tsp salt
- 1/2 cup orange juice, unsweetened
- 5 green onions, sliced, reserving some green slices for garnish
- avocado oil for cooking
- 1 cup carrot sticks
- 1 lb snow peas
- 1/2 cup orange juice, unsweetened
- 1/4 cup chicken broth, I like Kettle & Fire
- 1/4 cup coconut aminos
- 1 tbsp fresh ginger, minced
- 1 clove garlic, minced
- 1 tbsp sesame oil
- 2 tsp arrowroot powder
Sauce:
Directions
Combine in a large bowl, arrowroot, cassava, salt & orange juice & whisk well (it will be thick). Add chicken & stir to coat, set aside.
Add oil to pan, a bit more than coated.
Add chicken pieces not touching, cooking till golden brown, flip and cook other side.
Move to a plate lined with paper towels. Drain all but 2 tbsp of oil.
Add onions and carrots stirring until onions are translucent.
Add chicken back to pan.
Combine all sauce ingredients in a bowl whisking to combine.
Add sauce to pan, stirring well to coat chicken.
Add snow peas, stirring in and cook 4-5 minutes.
Garnish with green onions.
