This healthy version of Popeye's chicken from @pennysprimal is a great go to meal when you're craving some fast food fried chicken. Whole30 and Paleo-friendly, this mouth-watering recipe is sure to satisfy!

Ingredients

  • 3 - 4 lb Whole Chicken, cut into pieces
  • 12 oz Almond Milk Yogurt, unsweetened, I like Foragers cashewgurt
  • 3 whole Eggs, beaten in a large bowl with 1/4 cup water
  • 1 cup Medium Buffalo Sauce, see note
  • 1 cup Almond Meal/Flour
  • 1 cup Cassava Flour
  • 1 cup Tapioca Starch
  • 1/2 cup Arrowroot Flour
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Cayenne Pepper, or more if you like heat
  • 2 tsp Onion Powder
  • 2 tsp Garlic Powder
  • 1 tsp Dry Mustard Powder
  • Avocado Oil Spray

Directions

Place chicken pieces in a large bowl.
Add yogurt, stir, cover & refrigerate 2 hours.
Line baking sheet with foil & use baking racks, spray well with oil.
Preheat oven to 375°F.
Mix in large bowl, flours, arrowroot & all spice.
Mix in another bowl, egg mix & buffalo sauce.
Let excess yogurt drip off chicken pieces & dip in flour mix, egg mix & flour mix again.
Place on rack trying not to touch other pieces.
Spray chicken well with oil spray.
Bake for one hour or till cooked through.
You may need to spray again halfway through.
