    Greensbury Ambassador Penny Kovacs (@pennysprimal) brings us this quick and delicious meatball twist that's Whole30 and Paleo friendly. Done in the air fryer in just 12 minutes, these are the perfect go-to meal starter for those busy weeknights.

    INGREDIENTS

    • 1 lb Ground Chicken
    • 1 egg
    • 1/2 cup almond flour
    • 1 tsp salt
    • 1 tsp onion powder
    • 1/2 cup hot sauce, divided. I like The New Primal Medium Buffalo
    • 2 tblsp ghee
    • Oil spray

    DIRECTIONS

    1. In a large bowl, whisk egg and add almond flour, salt, onion powder and 1/4 cup hot sauce, mixing well.
    2. Add chicken and mix well.
    3. Form into nice sized meatballs. (I made 14)
    4. Spray air fryer basket.
    5. Place meatballs in not touching. May need to do in batches.
    6. Spray meatballs with oil.
    7. Set air fryer to 375 and cook for 12 minutes.
    8. Meanwhile in a saucepan, heat remaining hot sauce with ghee.
    9. Toss cooked meatballs in sauce.
    10. Enjoy!
