Brussels Sprouts with Bacon and Apple Juice

Cooking Brussels sprouts on the stove with some lovely bacon and then finishing them off with some sweet apple juice hits the spot. So easy, so tasty!
Prep time: 10 minutes
Cook time: 10 to 15 minutes
1 pound Brussels sprouts
2 slices organic applewood smoked bacon
1/3 cup apple juice
Salt and ground black pepper to taste
- Trim the ends of Brussels sprouts and pull off the outer leaves (if necessary), cut them in half, and set aside.
- In a medium sauté pan, cook bacon over medium heat until browned and cooked through, 2 to 3 minutes per side. Transfer bacon to a plate lined with paper towels to cool, then crumble it.
- Pour off all but 1 tablespoon of the bacon grease from the pan. Set the skillet over medium heat, toss in Brussels sprouts, and cook, stirring occasionally, until golden brown, 6 to 8 minutes. Add apple juice, cover, and steam until the liquid is almost completely absorbed and the sprouts are tender when pierced with a fork, 2 to 3 minutes. Check on the sprouts a couple times while they are steaming; if the liquid has already dried up, add a little water to the pan.
- Transfer sprouts to a serving bowl, top with crumbled bacon, season with salt and pepper, and serve warm.
