This savory breakfast strata is the perfect way to satisfy hungry houseguests this holiday season. Hearty, indulgent, and filled with flavor, it will be sure to please everyone at your table. And the best part? It can be prepared the night before so all it takes in the morning is to pop it in the oven while you enjoy your coffee (or mimosa!)

Ingredients

1 package Bacon (8 slices)

1/2 package Pork Breakfast Sausage (8 links)
1.5 lbs sourdough bread loaf, cut into 1-inch cubes (about 9 cups)
12 large eggs
1 large sweet yellow onion, chopped
2 cups heavy cream
5 oz baby kale
1/2 cup mixed herbs, such as fresh basil, chopped
1/2 cup gruyere cheese, grated
1/2 cup sun-dried tomatoes (in oil), julienned
1/2 tsp kosher salt, more as needed
Black pepper, as needed

Directions
Preheat oven to 375º. Butter 9x13" or other large baking dish.
Place bread cubes on large baking sheet and toast in oven for 15 min.
While bread it toasting, slice bacon into 1" pieces and cook in large cast iron skillet over medium-high heat until crisped up, about 15 minutes. Remove bacon with slotted spoon.
Remove bread from oven and set aside to cool. Leave oven on.
Add sausage links to pan and brown on all sides, about 10 min. Remove from pan and slice into 1/4" pieces.
Clean pan and place back on stovetop.
Heat 2 Tbsp olive oil over medium heat. Add onion to pan, season with salt and pepper and cook, stirring occasionally, until softened and starting to caramelize, about 10 minutes.
Add greens and continue cooking until wilted. Add sausage slices, stir to combine and cook an additional 3 minutes. Remove pan from heat and set aside.
In a large bowl, whisk 6 eggs, heavy cream, salt and pepper until beaten and combined.
Place a layer of bread cubes in baking dish. Top with half of the onion-greens-sausage mix. Add a layer of bacon and grated cheese. Repeat with another layer of bread cubes, mixture, bacon and cheese. Pour egg mixture evenly over strata.
Recipe Note
This strata can be prepared ahead of time. At this point, cover dish with plastic wrap and place in refrigerator until ready to cook, up to 12 hours. To complete, remove plastic wrap and bake per the following directions.
- Preheat an oven to 350º.
- Bake for 25-30 minutes or until top starts to firm up and slightly brown. Remove from oven and use the bottom of a drinking glass to create 6 indentations in top of strata. Crack an egg into each indentation.
- Add sundried tomatoes to top of strata and return to oven. Cook for an additional 20-25 minutes until egg whites are opaque, but not quite fully set.
- Remove from oven, scoop out servings keeping eggs intact and pierce yolks right before eating.
