A quick, 4-ingredient avocado sauce coupled with cheesy tortellini & a front door delivered fresh, wild-caught sockeye salmon will elevate your dish without even trying.

Avocado sauce is a personal favorite, especially for spring and summer. It can be paired with veggies or protein of your choice but this right here is my favorite combo. Salmon and avocado are a classic: on toast, crackers, pasta or on it’s own. I get salmon packs from Greensbury twice a month. Their fish and meats are fresh, organic and sustainable, and delivered to my door. 

Avocado Sauce

The avocado sauce is incredibly easy to make—only four ingredients!

Ingredients:

  • 1 ½ - 2 ripe avocados
  • ½ lemon, squeezed
  • 1 bunch fresh cilantro or basil (today, cilantro)
  • 2 garlic cloves
  • Salt and pepper to taste

Preparation:

  1. Blend all ingredients in a food processor.
  2. As an optional step, add ¼ cup of milk and blend to create a creamy sauce.
  3. Set avocado sauce aside.

Pan-Seared Salmon and Pasta

Ingredients:

  • 4-6 oz. pasta (I used cheese tortellini)
  • 1 tablespoon butter or extra-virgin olive oil (EVOO)
  • 2 salmon filets
  • Avocado sauce (see above)
  • Roasted asparagus
  • Salt and pepper to taste

Preparation:

  1. Cook pasta according to directions, drain and set aside.
  2. Heat the butter or EVOO in a frying pan over medium heat. When pan is hot, sear the salmon, about 2-3 minutes on each side, until a nice sear is achieved like in the picture above.
  3. Add avocado sauce to a sauce pan, season well with salt and pepper and toss in pasta.
  4. Arrange pasta and salmon on a plate, add roasted asparagus.
