Using the almond butter as your emulsifying ingredient is what makes this dish special. The added flavor of the chicken thighs puts it over the top.

INGREDIENTS

For the Chicken:

  • 2 (5 oz.) Boneless Skinless Chicken Thighs
  • 2 tbsp. Extra Virgin Olive Oil
  • 1 tbsp. Fresh Rosemary (finely chopped)
  • ½ Lemon (zested and juiced)
  • ½ tsp. Red Pepper Flake
  • Salt and Cracked Black Pepper (to taste)

For the Almond Butter Emulsion:

  • 3 tbsp. Balsamic Vinegar
  • 1 tbsp. Dijon Mustard
  • 3 tbsp. Almond Butter
  • 1 Orange (zested and juiced)
  • ¼ Cup Extra Virgin Olive Oil
  • Salt and Cracked Black Pepper (to taste)

For the Salad:

  • 1 Honeycrisp Apple (sliced into bite – sized pieces)
  • ¼ Cup Fennel (sliced into bite – sized pieces)
  • ¼ Cup Carrot (shredded)
  • ¼ Cup Blueberries
  • ¼ Cup Grape Tomatoes (halved)
  • ¼ Cup Red Onion (sliced into bite – sized pieces)
  • 4 Cup Baby Kale (loosely packed)
  • ½ Lemon (juiced)
  • 1 tbsp. Extra Virgin Olive Oil
  • Salt and Cracked Black Pepper (to taste)

 

INSTRUCTIONS

1. Season the chicken with salt and pepper and then the olive oil, rosemary, pepper flake, and lemon. On the grill or in a 400 degrees F oven, cook the chicken for 4-5 minutes on each side, or until it reaches 165 degrees F. When finished, allow the chicken to rest, and then slice lengthwise.

2. Combine the ingredients for the emulsion in a food processor, adding the olive oil last, then reserve for your salad.

3. Combine all of the salad ingredients in a bowl, leaving the olive oil and lemon juice until last. Dress the salad with the olive oil and lemon juice then mix thoroughly. Top the salad with the chicken and serve.

 

 

Tip: When dressing salads with a thick dressing, use extra virgin olive oil and lemon juice to apply extra “dressing” so you don’t leave your greens overdressed. Lemon and Olive Oil are important components for all salads but thickened dressings can ruin a salad if you apply too much.
