An incredible, tasty alternative to a kid-friendly favorite that’s usually off-limits to gluten-free eaters.

INGREDIENTS

For the Garlic Glazed Chicken Legs:

  • 3 (5 oz.) Chicken Drumsticks
  • 2 tbsp. Extra Virgin Olive Oil
  • 2 Eggs (Lightly Beaten)
  • 1 ½ c. Gluten Free Corn Flakes (finely crushed)
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • Salt and Cracked Black Pepper (to taste)

For the Sour Cream Smashed Potatoes:

  • 1 lb. Red Bliss Potatoes (skin-on)
  • ¼ c. Sour Cream
  • ¼ c. Heavy Cream or Milk
  • 2 tbsp. Unsalted Butter
  • 2 tbsp. Chives (chopped)
  • Salt and Cracked Black Pepper (to taste)

 

INSTRUCTIONS

1. Pre-heat oven to 375. Combine the garlic powder, onion powder, salt, pepper, olive oil, and eggs together. 

2. Dip the drumsticks in the egg mixture and then roll into the crushed corn flakes. Place on a baking sheet and bake for 22-25 minutes.

3.Boil the potatoes in salted water until softened all the way through, about 15 minutes. Immediately drain and, while still hot, mash them together with the remaining ingredients until properly “creamed.” Serve alongside your fried chicken.

 

Tip: While gluten-free options are widely available, not all corn flakes are GF, so make sure the ones you’re buying are if you’re planning on keeping this recipe free of gluten.
